THE OLD MINER'S HIGHBALL

1½ oz Cyrus Noble Bourbon
4 to 6 oz high-quality soda water
1 tsp rich demerara syrup (optional)

Build over ice in a Collins glass and stir lightly. Expel the lemon oils from a twist over the top of the drink and garnish with the twist.
