“Cyrus Noble is a traditional Kentucky bourbon with deep San Francisco roots. It has classic aromatic and palate characteristics, and at 90 proof, it’s both a great sipper and a stalwart base for classic bourbon cocktails, with a price point that is attractive to both the consumer and professional bartender. Many brands try to achieve or state that, but when you’ve got a whiskey that has been around as long as this one, there’s some weight behind your claim.”

"The aroma of the bourbon is more on the leather and dried herbs side (think thyme) than the syrupy, sweet side. This is a masculine whiskey, perhaps not full-on-Marlboro-Man-masculine, but definitely on that side of the scale. Once in a while you catch a glimpse of some dark chocolate or a little sweetened vanilla cream. The flavors harmonize well, but the volume is turned down to a gentle hum. "
"The nose is smooth and mild with notes of caramel, honey, vanilla, soft spices, and a hint of hazelnut. The taste is buttery with mild cinnamon, honey, toffee, and caramel notes. The finish is smooth with soft spices and a honey sweetness that lingers well."
